Peanut butter/Cocoa Oatmeal cookies (Oatmeal cookies 1.2)

These oatmeal cookies came out even better than the first ones!
As always: no sugar, no wheat flour.

Ingredients:

3/4 c Margarine (a friend recommended using vegetable oil instead; I haven’t gotten around to buying it yet but will try it next time)
1 1/4 c Honey
1 Egg
1/3 c Water (original recipe called for milk; we don’t do dairy and soy milk has sugar)
3 c Oats
1/3 c Amaranth flour
2/3 c Soy flour
¼ c unsweetened Cocoa powder
4 T Peanut butter
1/2 t Baking soda
1/4 t ground Cinnamon
1/4 t ground Nutmeg
1 c chopped Walnuts
grated Coconut for sprinkling on top before they go into the oven

Preheat oven to 375°F/190°C (see previous posts for my oven’s reality). Grease cookie sheet. Mix everything together in a bowl, and drop batter by spoonfuls onto cookie sheet. Bake for 8-10 minutes (my experience was 8). This recipe made 30 cookies total.
