Monday’s lunch recipe: Balsamic fillets

Today’s lunch was super easy: I pretty much followed the exact recipe I found online, though I cooked the fish on the stovetop and not in the oven. Faster and easier, in my opinion. I added my sesame seed mix on top, and used goat cheese rather than blue for Agustín’s dish.

Of course, I served this with salad.

I also discovered, after using as a salad dressing some leftover sauce he had prepared the other night, that the whole secret to the Holy Salad is the dressing, not so much the variety of ingredients. Or rather, the dressing is crucial to the Holy Salad. Good to know. I suspected he might get tired of the dressing, but apparently not.
