Chocolate Chunk Oatmeal Cookies 1.5
I made minor changes once again, adding some additional corn meal and vegetable oil. Last time, I said that this might just be the definitive recipe (version 1.4). It wasn’t, and I think this one might not be, either. Though for the first time the cookies are a lot more solid and aren’t falling apart like the previous versions. I’d say: give it a try.
As always: no sugar, no wheat flour.
Ingredients:
1 c Vegetable oil
1 1/4 c Honey
2 Egg whites
1/3 c Water
3 c Oats
1 c Soy flour
¼ c. Corn meal
¼ c unsweetened Cocoa powder
4 T Peanut butter (unsweetened)
1/2 t Baking soda
1/4 t ground Cinnamon
1/4 t ground Nutmeg
1 c chopped Walnuts
1 t. Vainilla
1 bar of unsweetened, gluten-free chocolate, cut into pieces
Preheat oven to 375°F/190°C (dot 5 out of 7 on my oven). Grease cookie sheet. Mix everything together in a bowl, and drop batter by spoonfuls onto cookie sheet. Bake for 12 minutes (note that I increased cooking time on this recipe). This recipe made 35 cookies total, a little bit larger than previous versions.
