Gooey Chocolate Chunk Cookies/Muffins

Found this recipe on AllRecipes, and thought it sounded great!

I substituted wheat flour for 1 1/2 cups of soy flour and 1 cup of this new corn flour that I found at the health food store on Friday. It’s not coarse like corn meal, it’s fine and whitish. I LOVED this flour and am really concerned because I bought the only bag of it. I will have to head over there and see when more comes in or if I can make a special order for it.

Anyway, I added 1 T of unsweetened cocoa powder and TWO bars of unsweetened chocolate, cut up in pieces.

The first batch of cookies came out TERRIBLE (see photo in previous post where they just oozed out into a solid mass of nastiness and then burned), so I thought of using the rest of the batter to make muffins, and they came out GREAT!!

This is a fabulous recipe and I won’t be doing anything to change it.

Update: Oh, duh. I OBVIOUSLY substituted honey for white sugar, too.
