Flour Proportions

September 18, 2009
tags: , ,

I had been using 2/3 soy flour and 1/3 white, finely ground corn flour in my baking recipes, but was curious about doing half and half, so I tried it in a simple bread recipe. Unfortunately, it didn’t work very well. The bread is crumbly and falls apart.

So, good experiment, but the original proportions were the best so far.
