Wednesday’s Lunch: Goat cheese-Onion Chicken

This was absolutely delicious, and sooooo easy to prepare.

I started out with the little chicken fillets that I’ve been loving lately. I put them in the bottom of a Pyrex baking dish with salt and olive oil. Then I sauteed green and yellow onion until soft, adding some fresh mushrooms about halfway through the process. I put this whole mixture on top of the chicken, covering it all with some thin slices of herbed goat cheese. Then it all went into the oven.

I wish I had a photo, but it was all gone before I thought of taking one. I will definitely be doing this again, and before summer gets here and it’s too hot to turn the oven on at lunchtime.
