Wednesday’s lunch: Salad with leftover chicken

Mondays and Wednesdays tend to be quick-lunch days, when I get back late from the kinesiologist and throw together a salad for lunch.

Salad 001

Today’s salad has:

Lettuce
Tomatoes
Sun dried tomatoes
Red bell pepper
Granny Smith apple
Blueberries
Goat cheese

After I mixed everything together, I shredded a breast of leftover chicken from last night, minus the sauce. We had some leftover tortilla chip crumbs from last night, so I added them to the top, after mixing with dressing.

I’ve been adding fresh crushed garlic to my regular salad dressing, and I really like it. I usually add two cloves, which I realize is pretty extreme for most people, but it works for us.
