In any case, there is this great page of bean muffin recipes that I am dying to try. They sound even healthier than the soy/corn combo I’ve been doing (beans are a great source of protein).
There’s also a fun list of salads…and a lot of other recipes, which sound pretty healthy, though most include cheese of some sort, mostly ricotta, which appears to be vital to this diet.
