Monday’s lunch: Salad with tofu

I put together a quick salad with radicheta, purple lettuce, red bell pepper, fresh tomato, and goat cheese, then added tofu that had been marinated in soy sauce and fried in olive oil. I used the same salad dressing as usual.
Yes, I know. You’ve been seeing a lot of this bowl. I love it, and ever since we made a habit of serving the salad in one large bowl and sharing it between the two of us, it’s been on the table every day, with some kind of salad or other in it.
