Gum confusion

Oh no, what to do?? So confused at this point. I was looking forward to picking up the secret ingredient for gluten-free baking on our trip to the US, since I haven’t had any luck finding it here in Argentina.

Unfortunately, now I’m confused. After reading this post that my mother sent me on xantham gum and guar gum, I discovered that xanthan gum is “the result of the mixing of corn sugar and a bacteria called Xanthomonas Campestris.” Corn sugar. Sugar. Arrrrrrrrrgh. Sugar is in everything!!!

Guar gum is apparently not as easy to digest, but it’s an extract of the guar bean, so there’s no sugar involved. And according to the post I linked to in the beginning, it shouldn’t be a problem if consumed in small quantities.

I think I actually may purchase some of each, though I am dying to read the label on the xantham gum, to see how much sugar is actually involved.

I’ll update once I have more info.
