Thursday’s Lunch: Spinach Tart (?)
Still not sure what to call this thing. It’s not a quiche, because there’s no cream or milk in it. Here in Argentina, you can find these things all over the place, and they’re called a tarta. They seem to be the preferred quick lunch, and come in more varieties than I can think of. I’ll do another post later with more ideas for these things.

Basically, it’s a salty pie. Like a shepherd’s pie, except I didn’t put a top crust on it. I used my gluten free pie crust, and added the following ingredients as filling:
1 1/2 Onions, sautéed
Spinach, one bag (sorry, sorry, I try to use fresh, but I always keep a couple of bags of the frozen stuff around for an emergency)
6 Sun dried tomatoes
6 fresh Mushrooms, sliced
250 gm. Goat cheese, grated
2 Eggs, beaten
Salt, to taste

Preparation:
Preheat oven to 375°F/190°C.
Grease pie dish. Prepare pie crust, and chill while you get the filling ready.
Sautée onions, heat up the spinach, add tomatoes and mushrooms.
Beat eggs, and grate cheese.
Roll out the pie crust in the dish, and add the spinach mixture. Pour eggs on top of spinach, then add the cheese at the end.
Bake for 30 minutes. Enjoy!

Hi there Savory Simple Jen! I love your blog, and am DYING to make your olive oil cake. I absolutely loved this recipe. I’ve been having slivers of it for snacks between meals, and it’s almost gone. It’s great both reheated or cold. I will definitely be making another version of this soon. What would you call this thing, BTW?
