Snack dilemma
In a FB discussion regarding our funky diet (sugar/gluten/dairy-free, except for goat cheese), a friend from high school who has a gluten/sugar-free son mentioned that the “hardest part is staying disciplined while traveling or eating out at restaurants.”
Tell me about it. There are so many temptations at restaurants, but the good thing is, there are usually healthy alternatives that fall within our diet restrictions.
Snack food is the hard thing. When I know I’m going to be out all day, like today, I have to plan ahead and pack a snack. Otherwise, I’ll have to grab something while I’m out and that invariably involves wheat. Or sugar. Or dairy. Or both.
Generally I take and apple and would love to bring goat cheese to go along with it (because I also more or less try to do the Zone, because it just makes sense to me, even though it complicates things even more), but with the heat there’s been lately I just don’t feel good about that, so I’ll probably bring an apple and almonds. Which works, but is kind of boring.
Muffins are also portable, and when I make them with lots of nuts and seeds I think they’re a pretty filling snack, and healthy as well. And now that my bean muffin recipe worked out, they’ve got a lot more protein in them.
Other days I’ll take a thick slice of home made gluten-free bread with me, which is also filling. Again, I usually make it packed with nuts and seeds.
These are just a couple of really basic options, but they’re portable and filling. I’ll see if I can come up with some new recipes that are a little more exciting!
