Quick Meal: Beans with goat cheese and tomatoes

Probably the only thing I hate about cooking these days is cooking for just myself, which thankfully doesn’t happen very often. It’s funny, because last week I submitted a recipe for Food52‘s Your Best Home Alone Dinner contest. I was seriously amazed at some of the entries. Honestly, who goes all out and makes a puff pastry when dining at home alone?

Maybe some people have fun cooking just for themselves. Not me.

Cooking for one is just boring, in my opinion. Today, we ate lunch together, but since Agus is not digestively well as of late (I swear, I had nothing to do with it), I made white rice and chicken breast for him and then had absolutely no clue what to make for myself. I ended up rummaging through the freezer and fridge for ideas before coming up with this quick and simple recipe.

Ingredients:

1 cup Beans
1 Green onion, chopped
6 Pear tomatoes, sliced in half
small handful Broccoli florets
3 T. Soft goat cheese
Olive oil
Red pepper flakes
Salt & Pepper

Preparation:

I sauteed the green pepper in olive oil, then added the tomatoes. I added the broccoli and beans, then lowered the heat and covered to steam. I then seasoned with pepper flakes,  salt, and pepper. Just before serving, I crumbled the soft goat cheese on top, then mixed well.

Just a note: the beans are leftover from last week’s bean salad. I froze what was left from the beans I didn’t use for the salad, and am so glad I did. They were a great addition to this simple recipe, and a good thing to have around for quick meals like this.
