Curry-Passionfruit Chicken

We were in a rush this afternoon, and I had forgotten to place an order with our chicken delivery this week (they only come on Wednesdays), so we ran out and got some (the horror!) factory chicken breasts so we could have a quick lunch at home.

I’m not even going to make a proper recipe out of this. Basically, I just sauteed some green onion, mushrooms, and a chile pepper in olive oil and about 1/3 cup of homemade chicken stock. I added red and green bell peppers, finely chopped. Then the chicken breasts, which I cut into thin fillets. Added some curry, then a generous dash of passion fruit juice/pulp. Sea salt to taste. I served with a sprinkle of multicolored sesame seeds on top, and a mixed salad on the side.

    I like the twist that sesame seeds add to any dish! I’ll start trying it :-)

    Sesame seeds go with everything, and have loads of nutrients. I highly recommend them!!
