Hot Cinnamon Apples for Breakfast
On Sunday morning, we were both craving junk food for breakfast (read: doughnuts filled with dulce de leche and topped with chocolate). In an attempt to avoid starting the day off with refined sugar and wheat (both of which lead to digestive havoc for the two of us), I came up with this. It was a great breakfast for a chilly fall morning (and easy to digest!).
Ingredients:
3 Apples, thickly sliced (I used two Granny Smith, which are my favorites, plus parts of a red apple)
1 Lemon, juiced
3 T. Honey
1 T. Ghee (We tend to digest ghee, or clarified butter, better than regular butter)
1 t. Cinnamon
Preparation:
Slice apples and juice lemon. Toss apples in a bowl with lemon juice.
Heat the ghee in a saucepan, then add apples. Sprinkle with cinnamon, and drizzle with honey. Cook, covered, until apples are soft.
You can also try this same recipe with fresh ginger or ground nutmeg or cardamom.

I was going to comment that it would be a good breakfast for children, but since I don’t have any of my own, that would just be guessing! It was yummy, and lightly sweet, and hot. Let me know what they think!
